Recipes Used in India with Title II Commodities
Bulgur Recipes


Bulgur and Lentil Meal (Bulgur Kichiri)

Ingredients:

1 cup bulgur, ½ cup lentils, 1 cup vegetables, 2-3 tablespoons oil, 5 cups water, salt/spices/chiles.

  • Soak 1 cup of bulgur in 3 cups of water overnight.
  • Soak ½ cup lentils (moong lentils) overnight in 2 cups of water.
  • Chop 1 cup of vegetables available in the season (e.g. green leafy vegetables, tomatoes, onions)
  • Heat 2-3 T. oil. Saute onions until brown, then add other vegetables and saute. Add chiles, salt, spices.
  • Strain bulgur and lentils and add to vegetables, setting strained water aside.
  • Cook and stir for 5 minutes.
  • Add water that remained from the soaking.
  • Cover and let cook 15-20 minutes, stirring occasionally.
  • Serve.

Bulgur and Greens Meal

Ingredients:

1 cup bulgur, 1 tablespoon oil, 1 cup spinach or other green leafy vegetables, ½ tsp. salt, 3 cups water. (If green leafy vegetables are not available, other vegetables in season can be used.)

  • Soak 1 cup of bulgur in 3 cups of water overnight.
  • Heat 1 T. of oil in pot.
  • Strain bulgur. Keep strained water aside. Add bulgur to heated oil, cook and stir for 4-5 minutes.
  • Add strained water.
  • Add 1 cup chopped spinach or other green leafy vegetables.
  • Add ½ teaspoon salt.
  • Cook for 10-12 minutes.
  • Serve.

Bulgur Sweet Dish

Ingredients:

1 cup bulgur, 1 tablespoon oil, 1 cup milk, 2 tablespoons jaggery (molasses from sugar cane) or sugar, 3 cups water.

  • Soak 1 cup of bulgur in 3 cups of water overnight.
  • Heat 1 T. of oil in pot.
  • Strain bulgur. Keep strained water aside. Add bulgur to heated oil, cook and stir for 4-5 minutes.
  • Add strained water.
  • Add 1 cup milk and 3 T. either jaggery or sugar.
  • Cook for 10-12 minutes.
  • Serve.
